Over run by Zucchinis- Part 2

I am pleased to say that the zucchini vine has just about finished producing. After the last post, we have had probably as many zucchinis again which made it necessary to come up with some new recipes. After googling and some recipe modification, this is what I have come up with. Zucchini Parmigiana and Zucchini Crisps (actually GB came up with this one, she did all the work and I got to eat them!).

Zucchini Parmigiana

I large zucchini (about 750 grams), sliced into discs about 2 to 3mm thick

1 tub bocconcini, sliced (210 gram tub from Aldi)

500ml Jar of tomato sauce (I used a Raguletto Red Wine and Basil mixed with passata)

Grated tasty

Grated parmesan

Preheat the oven to 200 degrees (fan forced). Grease your baking dish lightly with spray oil. The dish I used is about 2.5 litre capacity. Lightly flour zucchini pieces, fry in some hot oil and allow to drain on some paper towel. I reckon you could probably skip the frying and maybe microwave for a minute just to soften. This recipe is a calorie king hit!

Place the first layer of zucchini (a third), then a layer of bocconcini (a third), a layer of the tomato sauce (a third), a layer of the grated tasty and finally a layer of grated parmesan. Repeat the layers two more times.

Whack it in the oven and bake until the cheese has melted and browned to your liking. I served this with chips because I was feeling lazy however a salad would work well with it and is probably a much healthier alternative. Yum! Yum! Yum!

Zucchini Crisps

1/4 cup dry bread crumbs

1/4 cup grated parmesan

salt and pepper to taste

1 tsp garlic powder

2 Tblsp milk

2 1/2 cups zucchini sliced, about 5-6 mm thick

1. Preheat oven to 220 degrees celsius (fan forced). Prepare a baking tray by placing a sheet of baking paper.

2. Combine breadcrumbs, parmesan, salt and pepper and garlic powder.

3. Place milk in a shallow bowl. Dip zucchini slices in the milk and coat in breadcrumb mixture. Place slices on the tray and bake for 30 minutes or until crisp.

4. We doubled the mix for an extra healthy snack…

  1. Now, this looks yummy we did make fried z when we were kids, have to get MB to try this one for us.
