Another thing that gets a work out this time of year is the Mangoes. Mr D loves Mangoes and waits very patiently for them to come into season.
Mangoes mean Mango Daiquiris.
So combine Christmas Carols on Channel 9 and a Mango Daiquiri and what more could the D’s ask for?
A Christmas Eve celebration if ever there was one.
Here’s the recipe for a Mango Daiquiri. My Christmas Eve gift to you. Enjoy!
4 medium sized mangoes, peeled and chopped
3/4 cup white rum
3/4 cup vodka
3 lemons, juiced
1/2 cup sugar syrup
3 cups of ice
Firstly, make the sugar syrup as it needs to cool. I usually make a cup and freeze one half.
To make half a cup, dissolve 1/2 cup sugar in 1/2 cup of water. Allow to cool thoroughly.
Place sugar syrup and all of the other ingredients in a blender. Blend until smooth.
Enjoy! Don’t drink it too fast as you’ll end up with a brain freeze and if you’ve had a huge day, you’ll end up with wobbly legs.
Tip: If your mangoes are ripening faster than you can use them, peel and chop them and place them in the freezer.
