Rocky Road

This is not really my choice of sweet things (in fact I don’t have a sweet tooth at all) however Mr D loves it.

Here’s a recipe that will take you no time at all to make and it goes well with your cuppa at morning tea. You won’t find glace cherries in this recipe although feel free to add them.

Rocky Road

400 grams dark cooking chocolate

50 grams unsalted butter

1 cup desiccated coconut

1 cup crushed nuts

250 grams white and pink marshmallows, each cut in half

Grease and line a lamington tin. Cut each marshmallow in half.

Melt chocolate and butter in a large saucepan.

Working quickly, add remaining ingredients. Pour into the lamington tin and spread evenly.

Allow to set. Cut into desired sized pieces.

Quick and easy. The hardest part will be not eating it all at once.
